Beef Fajitas
Makes 4 servings
Ingredients
1 pound all-natural flank steak, sliced into stir-fry strips
1 packet dry fajita sauce seasoning (such as Seeds of Change), or use pre-made
sauce in a jar
1 yellow onion, cut into 1/4-inch slices
1 red bell pepper, cut into 1/4-inch slices
1 cup shitake mushrooms, sliced in half
Corn tortillas
1 avocado, sliced into thin strips
Low-fat cream cheese, optional
Fresh salsa, optional
Directions
- In a medium sauté pan over medium high heat, add yellow onions and sauté 2–3 minutes.
- Add beef and begin to brown. Add seasoning packet and follow directions on how much liquid to add, or use pre-made sauce.
- Add bell pepper and mushrooms and cook about 3-5 minutes, or until desired texture.
- Place corn tortillas on a plate, cover with paper towel, and microwave 1–2 minutes, until heated through.
- Serve with avocado slices, low-fat cream cheese, and fresh salsa, if desired.
